Discus Fish Tank Setup

Would these tank setups work?
10 gallon- 2 african dwarf frogs and 50+ red cherry shrimp colony (I use some as feeder shrimp for the larger tanks)
17 gallon- 1 axolotl. Can it have fine sand as substrate? If not, what would work?
20 gallon- 2 african dwarf frogs, 6 cardinal tetras, 1 kuhli loach, 15+ red cherry shrimp, and one mystery snail
55 gallon- 1 red tailed shark, 1 discus, 2 angelfish, 7 congo tetras, peacock eel, and 1 dinosaur bichir. Could I add a 5 inch butterfly fish? Or is my 55 gallon overstocked? And what degrees farenheit should the tank be at?

What if I got rid of the bichir and the butterfly fish? And added a electric blue cichlid? My parents won’t allow my to have anything larger than a 55 gallon so would I have to get rid of anything more than the bichir and the butterfly fish? I know that the red tailed shark is only supposed to be at 78.8 but could I possibly keep one?
I’ll just comment on the 55 gal set up.
Discus are a very specialised fish needing very specific water quality and high temperatures compared to other tropicals. The Angelfish should be able to tolerate it but the Congo’s are from Africa as the name would suggest and are used to very different water conditions, the red tailed shark would be too aggressive a tank mate for discus. The butterfly fish might be OK but I’m not sure of it’s water preferences. I can’t comment on the bichir or peacock eel as I’ve never kept them.
